A seasonal Basque cheesecake made with three heirloom pumpkins from Zestful Garden: Sweet Mama, Red Kuri, and Winter Luxury. Each one is roasted and puréed in-house. Sweet Mama adds richness, Red Kuri a nutty depth, and Winter Luxury a smooth texture.
Baked at high heat for a dark, caramelized top and a soft, creamy center, with a light touch of warm spice.
