About us

Nourishing the neighborhood.

We bake to nourish the people around us. That means good ingredients, chosen with care, and good food made fresh every morning. Every loaf and pastry is something we’d be proud to feed our own family, and we’re grateful to share it with yours.

BAS QUE began with a love of the burnt Basque cheesecake of San Sebastián: rustic, deeply caramelized, and soft at the center. Everything is baked by hand and handed out from our take-out window on S 24th St, Thursday to Monday.

Chosen with care

Flour from local mills and produce from nearby farms whenever we can, like the three heirloom pumpkins from Zestful Garden that we roast and purée by hand.

02

Fresh every morning

Our breads and pastries are baked fresh every morning we’re open, each one made with our sourdough starter. Our loaves rise slowly with Nuruk, a traditional Korean starter, for a rounder, gentler flavor.

03

The Basque way

Our cheesecake is baked at high heat, San Sebastián style, for a dark, burnished top and a custardy center. Simple, classic, and naturally gluten-free.

At the window

A little taste of Spain.

Alongside our cheesecake, look for empanadas, chestnut torrijas and a con leche made with oat milk.

Pre-order a whole cake for a celebration, or find one at the window while they last.
